MINI CUTLETS WITH DICED MANGO, RED ONION AND LIME

  • 6 lettuce leaves
  • 1 pack of Kioene mini schnitzels
  • 1 small ripe mango
  • 1 small red onion
  • 1 tablespoon chopped parsley or coriander
  • 2 juicy limes (or 3 if small)
  • olive oil to taste
  • salt and pepper to taste

METHOD

  1. Gently wash and dry the lettuce leaves. 
  2. Peel the mango and cut the pulp into cubes. 
  3. Peel the onion, slice it and cut it into small cubes. 
  4. Mix the mango with the onion and parsley and season with salt, pepper, zest and juice of one lime and 2 tablespoons of oil. 
  5. Cook the mini schnitzels as indicated on the package and place them on the lettuce leaves. 
  6. Garnish each mini schnitzel with the diced mango and onion and serve accompanied by more lime wedges.
