NUGGETS WITH CUCUMBER RIBBONS, CHERRY TOMATOES AND MOJITO SAUCE

  • 2 packs of Sfiziosi Nuggets
  • 2 medium cucumbers
  • 20 cherry tomatoes
  • For the sauce
  • EVOO
  • a sprig of mint
  • 3 limes
  • 1 small glass of rum
  • 1 teaspoon brown sugar
  • salt and pepper

METHOD

  1. Cook the Sfiziosi Nuggets as indicated on the package. 
  2. Meanwhile, grate the zest and squeeze the juice of 2 limes and pour it into a bowl, add sugar, a few mint leaves and pound the ingredients with a pestle. 
  3. Add rum, season with salt and pepper and emulsify with 100 ml oil. 
  4. Wash the cucumbers and, using a mandoline or a Y-shaped peeler, cut them into thin ribbons. 
  5. Wash the cherry tomatoes too, then make skewers by threading 2 or 3 folded cucumber ribbons and a cherry tomato. 
  6. Serve the Nuggets with the vegetable skewers dipped in the mojito sauce!
