GRILLED POLENTA MEDALLIONS WITH MUSHROOM BURGER

  • 1 pack of Kioene Mushroom Veggie Burgers
  • 2 slices of cold polenta
  • 2 slices of Fontina/Asiago or other cheese of your choice
  • A few sprigs of thyme
  • Pepper to taste

METHOD

  1. Place a grill pan over a very high heat. When it is red-hot, place the polenta slices on it and grill them until they fall off, then turn them over and grill them on the other side.  
  2. Set the oven to 180°. 
  3. Cook the burgers in the oven as indicated on the package, place them on the polenta croutons, cover them with the cheese slice and transfer the croutons to the oven to melt the cheese. 
  4. Once out of the oven, garnish with thyme, season with one turn of the pepper mill and serve.
