MINI CAKES WITH YOGHURT, SPICED APPLES AND MAPLE SYRUP

  • 1 pack of Kioene apple and sultana mini cakes
  • 2 organic apples of the pink lady or royal gala variety
  • 1 heaped tablespoon coconut oil
  • 2 tablespoons shelled almonds in their skins
  • 500 g white yoghurt
  • maple syrup
  • 2 cloves
  • 4 cardamom pods
  • 1 x 2 cm piece of cinnamon

METHOD

  1. Wash the apples, quarter them, core them and cut them into sticks. Cut the almonds into slivers.  Heat the coconut oil in a non-stick frying pan, add the spices and apples and fry gently for 2-3 minutes until soft, then remove from the heat and discard the spices. 
  2. In the meantime, bake the mini cakes according to the instructions on the package. Divide the yoghurt among 4 bowls. Place a mini cake on top, garnish with 1-2 spoonfuls of apples and a sprinkling of almonds. Sweeten with maple syrup to taste and serve
