Mini cakes with yoghurt, spiced apples and maple syrup

1 pack of Kioene apple and sultana mini cakes
2 organic apples of the pink lady or royal gala variety
1 heaped tablespoon coconut oil
2 tablespoons shelled almonds in their skins
500 g white yoghurt
maple syrup
2 cloves
4 cardamom pods
1 x 2 cm piece of cinnamon
METHOD
Wash the apples, quarter them, core them and cut them into sticks. Cut the almonds into slivers. Heat the coconut oil in a non-stick frying pan, add the spices and apples and fry gently for 2-3 minutes until soft, then remove from the heat and discard the spices.
In the meantime, bake the mini cakes according to the instructions on the package. Divide the yoghurt among 4 bowls. Place a mini cake on top, garnish with 1-2 spoonfuls of apples and a sprinkling of almonds. Sweeten with maple syrup to taste and serve
