SPINACH BURGER WITH COURGETTE SALAD, SPINACH, AVOCADO AND GRAPEFRUIT LEMON VINAIGRETTE

1 pack of frozen spinach burgers
1 avocado
80 g washed spinach
1 yellow courgette
half a yellow grapefruit
half a lemon
1 tablespoon mustard
80 ml evoo
salt and pepper to taste
METHOD
Prepare the lemon vinaigrette: put the mustard in a bowl, squeeze the half grapefruit and the half lemon and add the juice to the mustard, mixing it with a small whisk.
Add salt and pepper and drizzle in the oil while continuing to stir.
Wash the courgette and, with a peeler or mandoline, cut it into thin ribbons;
peel the avocado and cut it into wedges.
Arrange the courgettes, avocado and spinach on two plates and dress them with the lemon vinaigrette
Cook the burgers as indicated on the package and accompany them with the salad.
