  • 1 pack of veggie drops with spelt, tomato and asparagus
  • 400 g asparagus
  • 20 g walnut kernels
  • 6 sundried tomatoes in oil
  • 2 slices of durum wheat sliced bread
  • oil from the sundried tomatoes
  • salt and pepper to taste

METHOD

Blend the bread slices without pulverising them.
Drain the tomatoes and pour about 2 tablespoons of oil into a non-stick frying pan; heat it and brown the bread until golden and crispy.
Coarsely chop the tomatoes, mix them with the fried bread and season the mix with salt and pepper.
Cook the veggie drops as indicated on the package. Meanwhile, wash and dry the asparagus.
Slice it on the bias, stopping about halfway up where the hard part of the stalk begins (you can use the end part to make a vegetable stock)
Put the asparagus into a bowl and season with the bread and tomato crumble
Arrange the asparagus on a plate, place the veggie drops with spelt, tomato and asparagus on top, garnish with chopped walnuts and serve.
